Try This At Home: Edamame!
Gimme More Edamame!
Edamame: This heart-healthy source of protein is rich in both fibre and folate.
In 1/2 cup of shelled edamame you'll get a bunch of fiber: 9 grams, about the same amount you'll find in 4 slices of whole-wheat bread or 4 cups of steamed zucchini. It has almost as much protein as it does carbohydrate. It contains around 10% of the daily value for 2 key antioxidants; vitamin C & A. For plant food, it's also quite high in iron; it has about as much as a 4 ounce roast chicken breast.
Very Simple to cook: buy frozen in pods or shelled & sauté in a pan with a little olive oil and garlic.
